Almond Paste Cookies

Easy recipe. Yummy. I added a tiny bit of almond extract, walnuts (or almonds) and grated orange zest. I also dropped them with an ice cream scoop, rather than forming with hands, to make it easier. You can then flatten each cookie ball with a fork if desired.

These are great! I forgot the sugar (oops!) so I rolled them in raw sugar and they were sweet enough - almost like European style cookies. delicious with coffee and I would defintiely make these for any guests, special event or gift! Added the zest of one lemon.

Mine did not bake completely, and I had to take them out because a number of them burned on the bottom. I also added about 1 cup ground walnuts, and coated the cookies in confectioners sugar. They tasted delicious in spite of. Next time I will bake them at 325°F and see what happens. What an easy cookie recipe!
