BANANA APPLESAUCE BREAD 
3 ripe bananas
1 c. sugar
1/2 c. applesauce
2 eggs
1 tsp. baking soda
1 tbsp. baking powder
1 tsp. salt
1 tsp. vanilla extract
2 c. flour

Place bananas in large bowl and mash with electric mixer. Stir in the sugar and let stand 15 minutes. Add the applesauce and eggs and beat well. Beat in the baking soda, baking powder, salt and vanilla, then gradually beat in the flour, mixing thoroughly. Pour into a 9 x 5-inch loaf pan that has been coated with nonstick spray.

Bake at 350°F for 45 minutes or until a toothpick inserted in the center of the loaf comes out clean. Remove from oven and let stand 10 minutes before removing from the pan.

Makes 1 loaf.

OPTIONAL FROSTING:

1/2 c. powdered sugar
1/4 c. creamy peanut butter
3 tbsp. milk

Beat until well blended. Frost bread.

Here is how I changed mine a bit -

4 bananas
1/2 c. white sugar
1/2 c. brown sugar
real vanilla vs. extract
1 tbsp cinnamon (didn't measure, just guessing)
pear sauce in place of apple
chocolate chips

I've made it the way it says, but with 4 bananas and the way I listed and both came out great. I do think the way I listed above gave it a bit more flavor and the chocolate chips made it drool worthy! I don't know if there was any difference using pear vs apple sauce.

Used 1/2 whole wheat flour 1/2 regular and substituted some brown sugar in for the plain. Absolutely delish with some added walnuts for consistency.

Best recipe I have tried! The only thing I added was 2 tablespoons softened margarine for that richer flavor. I also made this recipe into 2 loaves and they baked up perfectly in 40 minutes.

Delicious pie crust! Not having a pastry brush and no time to shop, I invented one that worked very well with this recipe. It may come in handy if you are making pies away from from your kitchen. It was simple. I rolled a quality paper napkin and fringed the ends with my herb scissors. So then, necessity is the mother of invention after all! Hope is is useful to you someday! Love this! I had 3 ripe nanners I didn't know what to do with and found this. I made MUFFINS (standard size-it made 18 muffins) instead of a loaf. How I changed it was 1/2 cup of regular sugar and 1/2 cup of packed brown sugar, and also added 1 teaspoon of cinnamon. I buy those single serving cups of applesauce and they happen to be the correct amount to use in here. I did not use the optional frosting but next time I may use a different kind, like a crumble top. I baked the muffins at 350°F for about 30 min. Next time I may add choc. chips or peanut butter chips to it. Can't wait to make again!

Great recipe. I didn't have a loaf pan so I cocked it in my cast iron skillet! I won't ever use a loaf pan for this - great skillet bread/cake!

Loved this, and so did my kids! I altered the recipe slightly with the following adjustments:

Used only 3/4 cup sugar made of 1/4 cup coconut sugar, 1/4 cup brown sugar and 1/4 cup regular white sugar.
Added 1 cup of applesauce plus a 4 oz. "squeeze pack" of apple/carrot puree.
Added 1/4 cup chocolate chips.

I baked in a mini muffin pan for 25-30 minutes at 350°F and it made 48 :)

Loved this! I made the following alterations: Decreased the sugar to 1/2 cup and switched to brown sugar instead of white, used half whole wheat and half brown rice flour instead of white, added walnuts to the batter, and put a few chocolate chips on top (instead of inside to be a bit healthier). I doubled the recipe and put both pans in the oven at the same time, so it took about 55 minutes to cook through. Came out AMAZING.

Wonderful recipe. I used whole wheat pastry flour and replaced the sugar with 1/2 c brown sugar. I also added ground flax seed. Instead of bread, I made muffins. Turned out great. B

I made these as muffins but did 1/2 cup brown sugar and 1/2 cup white sugar and added a 1/2 tbsp cinnamon and baked for 15 minutes. They are delicious!
