SPECIAL FRESH VEGETABLE DISH
This is a large dish that should be shared with a group of people at a festive Thanksgiving or Christmas meal. I like to use FRESH, FRESH, FRESH veggies for my dish!

3-4 yellow or green zucchini squash
1 1/2 lb. green snap beans
1 large bunch of broccoli
1 bunch of asparagus
1 pkg. of frozen corn (approx. 1 cup)
1 pkg. of frozen green peas (approx. 1 cup)
diced green onion or two to season (optional)
1 stick of butter, divided
seasoning, to taste
dried croutons, bread crumbs - any flavor you prefer

Either microwave or grill veggies until they are warm, but crisp still.

Toss them lightly together in 11x8-inch or 13x9-inch baking dish - spraying dish with Pam first.

After placing veggies lightly into dish together, dollop a few pats of butter over the top of all the veggies, season it with whatever kind of spices you like on your vegetables: salt, pepper, powdered onion or garlic sprinkled on the greens on green onions - anything you enjoy!

Bake in oven at 325-350°F for 15 to 20 mins to finish cooking the vegetables - depending how well you like your veggies cooked. Sprinkle some dry bread crumbs (I prefer cornbread) mixed with 1/2 stick of butter (room temp), and then sprinkle that on top. Return to the oven for a few minutes to crisp up the top.

Serve warm, and add something healthy to that special dinner!

Since microwave ovens vary in power, you may need to adjust your cooking time.
