LEMON CHESS PIE 
1 1/2 c. sugar
4 tbsp. flour
1 stick melted butter (regular) not reduced
2 eggs, unbeaten
1 c. buttermilk (cultured)
1 tbsp. lemon extract

Cream together sugar, flour and butter. Add buttermilk, eggs, lemon extract and beat until smooth. (Better with mixer at low speed). Pour into unbaked 9 inch pie crust (one). Bake at 350 degrees for 50 to 60 minutes.
