MEXICAN PIZZA 
1 (7 inch) flour tortilla
1 oz. grated part-skim Mozzarella cheese
1/2 oz. smoked turkey, cut into sm. strips
1 tbsp. cooked fresh or frozen corn kernels
1 tbsp. chopped scallion
1 tbsp. chopped avocado
1 tbsp. spicy salsa

1. Preheat broiler.

2. Lay a flour tortilla on a baking sheet.

3. Sprinkle the tortilla with the cheese, the turkey, corn and finally the scallions on top.

4. Broil for 1 minute, then transfer to a warmed serving plate. Top with avocado and salsa, and cut into 8 wedges.
