MEXICAN PIZZA 
1 box flour tortillas
1 lb. ground beef
1 env. taco seasoning mix
1 can refried beans
1 jar thick & chunky salsa
4 c. shredded Monterey Jack cheese
Sliced black olives
sliced green onions

In large skillet, add peanut oil to 1/4 inch depth. Heat oil to 375 degrees. Fry tortillas, one at a time, in hot oil until lightly browned and blistered, about 10 minutes per side; drain on paper towels.

Prepare ground beef and taco seasoning according to seasoning envelope directions. Spread 2 tablespoons refried beans on each tortilla shell; top with 2 tablespoons each of beef and salsa. Sprinkle with 1/2 cup cheese and garnish with black olives and green onions. Broil pizzas 8 inches from heat for about 2 minutes, until the cheese is melted. Makes 8 pizzas.
