GERMAN POTATO SALAD 
6 med. potatoes
3/4 c. chopped onion
2 tbsp. flour
2 tbsp. sugar
6 slices bacon
1/2 tsp. celery seed
1 1/2 tsp. salt
Dash of pepper
3/4 c. water
1/2 c. vinegar

Boil potatoes in their skins until tender. Peel and slice thinly into a bowl. Fry bacon until crisp. In 1/3 cup of the bacon fat, fry onions until yellow. Mix in flour. Then add sugar, salt, celery seed and pepper.

Combine water and vinegar and stir in gradually. Cook, stirring until mixture is smooth and boiling. Boil 1 minute. Pour over potatoes. Add crisp bacon broken in pieces. Save some for garnishing. Cover and let stand until ready to eat. Heat over hot water. Garnish.
