APPLE CARROT GELATIN SALAD 
1 pkg. orange Jello
8 oz. pkg. cream cheese
1 1/2 c. hot water
1/2 c. orange juice
1 c. grated carrots
1 c. chopped apples (with skins on) in small pieces

Dissolve Jello in hot water. Add cream cheese and beat with mixer until cheese melts and Jello dissolves. Add orange juice; let set until slightly thick. Then fold in carrot and apples. Mix together and set until firm. You can use 8 ounces cream cheese in a double recipe also. It won't be quite as creamy, but just as good! You can make this 2 or 3 days ahead of the time of serving.
