CUBED STEAK CASSEROLE 
1 stick butter
6 cubed steaks
2 med. onions, sliced
1 jar mushrooms, sliced
1 c. buttermilk
1 can cream of mushroom soup
3 tbsp. chopped parsley
1/4 tsp. pepper
1/4 tsp. salt
1/4 tsp. dry mustard
4 med. potatoes, sliced
3 carrots, sliced

In large pan melt butter, brown steaks, slowly. Remove steaks from pan. Add onions to drippings and saute until tender. Remove from pan and reduce heat. Combine mushrooms with liquids, soup, buttermilk, parsley and seasonings with drippings in pan and heat. Place layer of half potatoes, carrots, onions and steak. Repeat layers. Pour liquids over it and bake at 350 degrees, uncovered for 1 hour and 20 minutes. Serves 6.
