EBBIE'S HOMEMADE LAYERED PIZZA PIE | |
Funny Note: My back was hurting really bad, so I took something really strong for pain. I became very groggy (or as my husband would put it, stoned) and with out even remembering doing it, I came up with this recipe and everyone loved it! Unfortunately they all rolled around on the floor laughing their butts off, when I told them how I came up with this recipe. Now I DON'T recommend you trying this heavily medicated. But I thought you would get a kick out of my little story. 1 can refrigerator biscuits (Grands; your choice) assorted lunch meats (turkey breast, ham, salami, etc.) sliced Provolone and Mozzarella cheese 10 slices cooked bacon 1 cup chopped onion and bell pepper, mixed sliced black olives (optional) tomato paste Preheat oven 350°F. Take non-stick cake pan and layer the biscuits on bottom of cake pan. Smash and spread the biscuits to form a crust that extends up the side of the pan. Spread 2 to 3 tablespoons of tomato paste on the bottom of pan on uncooked crust. Place one to two slices of assorted lunch meat on top of tomato paste. Place 3 to 4 slices of cooked bacon. Sprinkle approximately 1/4 cup of onion (olive) mixture on top of meat layer. Then top with 1 to 2 slices of either Provolone or Mozzarella cheese. Spread 2 to 3 tablespoons of tomato paste over the cheese. Repeat to form four layers. Topping it with cheese. Once you finished layering the pizza pie, spray cooking spray on top (for a buttery flavor, I use a butter flavored cooking spray) and cover with non-stick aluminum foil (non-stick side down). Then place a cast iron skillet or pot on top, to compress the pie down while cooking. Bake at 350°F for 45 minutes to 1 hour, or until crust is golden brown and cheese is nice and melted. Enjoy!!!
