TILLIE'S FIESTA BEANS 
1 lb. pinto beans (make sure pebbles are out, rinsed)
1 qt. water and plus as needed (don't let beans dry out)
1 tsp. salt
1 lg. onion, minced
1 bell pepper cut to large than minced
1 (16 oz.) can whole tomatoes (cut in pieces or stewed tomatoes)
1/2 lb. pieces ham or eckrich sausage pieces
3-4 chilies, cut into pieces (not jalapeno), unless you like them hot & they're excellent that way too

Cook beans in a large pot covered in water for about 1 hour in a medium to medium low heat. Add all other ingredients and cook for about another 1 1/2 hours, simmering low until beans are cooked soft. Serve with barbeque meat and salads.
