LEMON MERINGUE PIE 
1 c. sugar
3 tsp. starch
1 1/2 c. cold water
3 egg yolks
2 tbsp. lemon rind
1/4 c. lemon juice
1 tbsp. butter

In 2 quart sauce pan stir together 1 cup sugar and cornstarch. Gradually stir in water until smooth. Stir in egg yolks. Stirring constantly bring to boil over medium heat and boil 1 minute. Remove from heat. Stir next 3 ingredients. Cool. Pour into pastry shell.

MERINGUE
3 egg whites
1/3 c. sugar

In small bowl mix at high speed egg whites until stiff. Gradually add sugar and beat for 1 minute. Spread on pie. Bake in oven at 350 degrees for 15 to 20 minutes or until light brown. Serves 6 to 8.
