EGGLESS OATMEAL RAISIN COOKIES 
2/3 c. (1 1/3 sticks) butter softened
1 1/4 c. granulated sugar
1/2 c. milk
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt
2 1/2 c. uncooked quick oats
Raisins or nuts or dates to suit taste

Mix well. Chill. Roll into small balls and place on greased cookie sheet. Flatten with bottom of glass dipped in sugar. Bake 9 minutes in 375 degree oven.

Mmm, these were delicious! I didn't have eggs OR milk at the time, so I substituted the milk for water. While I wish I had had the milk to make this recipe as intended, these cookies are still delicious, although they're very soft when they first get out of the oven!

Tastes like 1 1/2 cups flour is a bit too much, will try with 1 1/4 cups next time. Added chocolate instead of raisins, nuts, or dates as I didn't have any of them. Otherwise delicious. Also didn't squish with a sugar covered glass, just spooned onto cookie sheet sprinkled cinnamon sugar and baked.
