2 eggs
1 c. sugar
1 c. vegetable oil
1/2 c. brown sugar
1 tsp. vanilla
2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. walnuts
2 Granny Smith apples, unpeeled and diced

Sift by hand, do not use mixer. Mix eggs, oil, sugar and vanilla. Sift together and add dry ingredients. Stir in walnuts and apples. Place in a greased bundt pan or 9 x 13 inch pan. Bake at 350 degrees for 1 hour.
