EASY CHICKEN 
2 tbsp. oil
1/4 c. lemon juice
1/4 tsp. pepper
1 (2 1/2-3 lb.) fryer, cut into serving pieces and skinned
1 c. fine bread crumbs
1/4 c. grated Parmesan cheese

Combine oil, lemon juice and pepper in a large bowl. Add chicken; toss to coat each piece. Cover and refrigerate for at least 1 hour. Heat oven to 350 degrees. Combine crumbs and cheese in flat pan. Remove chicken from marinade and completely coat each piece with crumb mix. Arrange in pan sprayed with Pam in one layer. Bake for 1 hour or until cooked through.
