FILLET OF SOLE FLORENTINE 
4 fillets of sole (or other white fish)
1/4 c. dry white wine (opt.)
4 tsp. lemon juice
1/4 tsp. oregano
1/4 tsp. sesame oil
2 c. cooked, chopped spinach
Pinch nutmeg
4 tbsp. grated Parmesan cheese
Paprika

Preheat oven to 350 degrees. Place fish in shallow baking dish and sprinkle with lemon juice, wine, oregano and oil. Bake 5 to 10 minutes (depending on thickness of fish) until partially cooked. Remove from oven and spread 1/2 cup spinach over each fillet. Sprinkle each with nutmeg, 1 tablespoon grated cheese and paprika. Return to oven and bake 8 to 10 minutes or until fish flakes easily when touched with a fork. Garnish with lemon wedges.
