FILLET OF SOLE PARMESAN | |
1/2 c. grated Parmesan cheese 1/4 c. butter, room temperature 3 tbsp. mayonnaise 3 tbsp. chopped scallions 1/4 tsp. salt Dash Tabasco sauce 2 lb. skinless sole fillets (or any fresh white fish) 2 tbsp. lemon juice Combine cheese, butter, mayonnaise, scallions, salt and Tabasco. Set aside. Place fish fillets (serving size) in a single layer in a buttered baking dish. Brush with lemon juice and let stand 10 minutes. Broil fillets 3-4 inches from heat and 4-5 minutes. Spread with cheese mixture and broil 2-3 minutes longer or until golden. 6 servings. |
