FILLET OF SOLE WITH
PARMESAN-MUSHROOM SAUCE
 
1 lb. fillet of sole
Salt and pepper to taste
1/2 lb. mushrooms, sliced
3 tbsp. butter
1 tbsp. flour
1 c. sour cream
5 tbsp. butter, well softened
1 tsp. imported soy sauce
Salt and pepper to taste
1/4 c. freshly grated Parmesan cheese
1 tsp. sweet Hungarian paprika

Place fish fillets in 1 layer in a buttered shallow baking dish. Sprinkle with salt and pepper. In a skillet, saute sliced mushrooms in butter until browned. Transfer to a bowl. Toss mushrooms with flour and stir in sour cream, well softened butter, soy sauce, and salt and pepper to taste. Pour sauce over fish and sprinkle with freshly grated Parmesan cheese and paprika. Bake at 400 degrees for 10 minutes.
