1 c. butter, soft
1 c. sugar
1 c. brown sugar
1 tsp. vanilla
1 egg
1 c. potato flakes
1 c. coconut
1/4 tsp. salt
1 tsp. baking soda
2 c. flour
1 c. nuts (optional)

In a large bowl cream sugars, butter and vanilla until well blended. Beat in egg. Add remaining ingredients and blend thoroughly. Shape into 1 inch balls and place on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.

Bake at 350 degrees for 6-8 minutes, until a light brown. Makes about 5 dozen cookies.
