BUTTER CRISP COOKIES 
1 c. butter
1 c. sugar
1 c. packed brown sugar
1 tsp. vanilla
1 egg
2 c. flour
1/2 tsp. baking soda
1 c. instant potato flakes
1 c. flaked coconut

Sift all together. Shape into 1 inch balls. Bake at 375 degrees for 15-20 minutes.
