3 c. Hungry Jack potato flakes
3 c. Bisquick mix
2 sticks butter
2 eggs
2 tsp. coconut flavoring
2 c. sugar

Cream shortening, sugar, and eggs together. Stir in Bisquick. Fold in flakes and flavoring. Drop on cookie sheet and flatten with press or glass. Bake at 350 degrees for 8-10 minutes.
