POTATO SALAD 
8 med. potatoes, cooked and cubed
3 hard cooked eggs, diced
1 onion, minced
3 stems celery, chopped

DRESSING:

1 c. sugar
1 tbsp. cornstarch
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. vinegar
1/2 c. water
2 eggs, beaten
1 tsp. prepared mustard
1/2 c. salad dressing

Toss together potatoes, eggs, onion and celery. Prepare dressing by combining dry ingredients in a saucepan. Gradually add vinegar and water to make a smooth paste. Add eggs and cook until thickened. Remove from heat and add mustard and salad dressing. Pour hot dressing over warm potato mixture and toss. Chill overnight.
