TURKEY, LETTUCE & MUSHROOM SALAD 
Preparation time: 25 minutes. Serves: 4.

2 c. diced turkey
1 sm. head Romaine lettuce, torn
8 to 10 mushrooms, sliced
1 red or green pepper, sliced
3 stalks celery, thinly sliced
4 green onions, thinly sliced
Alfalfa sprouts, for garnish

DRESSING:

3/4 c. vegetable oil
1/4 c. lemon juice or cider vinegar
3/4 tsp. salt
1/2 clove garlic, minced or pressed
Dash of paprika or black pepper

1. Combine turkey, lettuce, mushrooms, pepper, celery and onions. Set aside.

2. Combine all dressing ingredients in a bottle. Cover with lid and shake until well blended.

3. Toss salad gently with enough dressing to coat ingredients.

4. Transfer to salad bowl. Garnish with alfalfa sprouts. Serve with additional dressing on the side.

Good served with: Slices of buttered date nut bread and raspberry sherbet for dessert.

TIPS: If you do not have any turkey on hand, buy packaged turkey slices and cut into thin strips.
