“DOWN EAST SHRIMP” IS IN:

DOWN EAST SHRIMP 
1 1/2 cups small raw shrimp, peeled
2 tablespoons onion, finely chopped
1 teaspoon garlic, minced
2 tablespoons green pepper, minced
3 tablespoons bacon drippings
salt and pepper, to taste
1 teaspoon Worcestershire sauce
1 tablespoon tomato ketchup or Heinz chili sauce
1 1/2 tablespoons flour (or Wondra)
1 cup water (or more)

Sauté the onion and green pepper in the bacon drippings (olive oil may be substituted). Add the garlic when the onions take on a light golden color; cook for another minute.

Add shrimp, stirring and turning several times. Stir in just enough water to make a sauce (about 1 cup). The less water used, the tastier will be the sauce.

Simmer for 2 or 3 minutes. Thicken the sauce with the flour. Add seasoning, Worcestershire sauce and ketchup.

Simmer slowly over low heat until the sauce thickens. Serve over rice or noodles.

Makes 4 servings.

This dish was very good, I was using 2 lb. of shrimp instead of the amount called for so I added a little more flour, will try again!
