SQUASH PATTIES 
1 lg. zucchini = 4 c.
2 eggs
1/2 c. grated onion
1 tsp. mint
1/2 c. grated Romano cheese
1/2 c. Bisquick
1/4 c. bread crumbs OR oatmeal

Grate and drain zucchini - squeeze out excess water. Mix in all ingredients. Heat small amount of oil in frying pan. Pour in batter (like pancakes). Brown on both sides.
