SQUASH PATTIES 
6 to 10 yellow squash, grated
1 med. onion
1 1/2 tbsp. salt
1 c. self-rising flour
1/2 c. cornmeal
Pepper to taste
1 egg
1 c. grated Cheddar cheese (optional)

Place grated squash and onion in a colander and sprinkle them with salt. Let set over sink until all the moisture is gone. Add flour, cornmeal, pepper, cheese, and egg; mix together. Form into patties and fry. Serves 8 to 10.
