APRICOT LOAF 
1/2 cup chopped dried apricots
2 cups sifted flour
1/4 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 egg, well beaten
1/2 cup milk
1/2 cup corn syrup
2 tbsp. oil

Pour boiling water over apricots. Let stand 15 minutes. Drain; dry on paper towels.

Sift together flour, sugar, baking powder and salt. Combine egg, milk, syrup and oil. Add to dry ingredients and mix just enough to blend. Fold in apricots. Turn batter into a greased 9 x 5-inch loaf pan.

Bake at 350°F about 50 to 55 minutes. Turn out on wire rack to cool.
