SWEET BEANS 
5 c. red beans
1 c. coconut milk
1/2 c. raisins
2 c. sweet potatoes or pumpkin, peeled and cubed
Salt and sugar to taste
1 tbsp. ground cinnamon
1/4 tbsp. whole cloves

1. In a saucepan place the beans and cover with water. Season with salt. Cook them for 3 hours or until tender. When done push the beans through a sieve with enough cooking water to make a thick red cream.

2. In a large saucepan mix the creamed beans, coconut, milk, raisins, sweet potatoes, sugar and salt. Then cook slowly for 1 hour until the sweet potatoes are cooked and mixture is thickened. Stir occasionally so it does not stick. Now it is ready to serve hot/cold.
