SWEET POTATO PORK CHOP CASSEROLE 
5 loin pork chops
1-1 1/2 lb. cooked (or canned sweet potatoes) cut lengthwise into 3/4" slices
1 c. cranberry sauce
1/2 tsp. thyme (optional)
Salt & pepper to taste

Heat large skillet, sprinkled with 1/4 tablespoon salt. Fry pork chops on each side until delicately browned. Pour about 2 tablespoons fat drippings into baking dish. Arrange potato slices on greased dish. Pour cranberry sauce over them.

Arrange pork chops as top layer of casserole. Sprinkle chops with thyme, salt and pepper to taste. Bake, uncovered, in preheated 400 degree oven just until pork is well cooked, about 35-40 minutes, depending n thickness of chops. Serves 5.
