FRESH APPLE CAKE 
4 c. peeled & diced apples
2 eggs
2 c. sugar
2 tsp. cinnamon
1/2 c. salad oil
2 c. flour
2 tsp. baking soda
1 tsp. baking powder

TOPPING:

1/2 tsp. cinnamon
1/2 c. brown sugar
1/2 c. chopped nuts

Break eggs over apples. Stir coating apples. Add sugar and oil. Sift flour with soda, cinnamon and baking powder. Mix all ingredients. Pour into greased and floured 9"x13" pan. Sprinkle topping over cake. Bake at 350 degrees for about 45 minutes. Can substitute fresh rhubarb for apples.
