BEEF AND RICE BAKE 
1 lb. ground beef
1 pkg. dry onion soup mix
3/4 c. uncooked white rice
1 1/2 c. boiling water
1 can (16 oz.) tomatoes, undrained
1 c. shredded Cheddar cheese

Brown ground beef, drain off fat. Combine with soup mix, rice, boiling water, and tomatoes. Put in a 2 quart casserole that has been sprayed with Pam. Bake covered at 350 degrees for 45 minutes or until rice is tender. Uncover, sprinkle with cheese. Bake 5 minutes or until cheese melts.

I have been preparing this dish since late 1970's. Our entire family love this meal and it is so quick to prepare. I do add garlic and mushrooms just to make it my own.
