ITALIAN FRIED DOUGH (ZEPPOLI) 
1 cup flour
1 teaspoon vanilla
3 eggs
3 teaspoons baking powder
3 tablespoons sugar
1 lb. ricotta cheese

Mix all together well. Drop by tablespoons into hot oil (deep fryer or in large pot) 350°F degrees. Cook until light brown, but you may need to roll them so they cook evenly in the oil.

Roll in powdered sugar. To me, these taste like the funnel cakes found at carnivals.

In Malta we fill the Zeppoli with ricotta cheese,sugar chocolate and amaretto liquor. They are simply delicious!

Apparently you've never had a funnel cake. Zeppolis are nothing like funnel cakes. Zeppolis are bread, whereas funnel cakes are cake batter that is deep fried. Both are delicious but are not the same.
