MICROWAVE SPINACH CASSEROLE 
1 (10 oz.) frozen chopped spinach
2 eggs, beaten
2 tbsp. milk
1/4 c. cottage cheese
1/2 tsp. salt
1/4 c. grated sharp cheese
1 c. herb seasoned stuffing mix

Thaw spinach in microwave about 3 minutes or until can be separated. Combine all ingredients. Spread evenly in a greased 1 to 1 1/2 quart casserole. Microwave on high 5 to 7 minutes. Let stand 2 to 3 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
