COCONUT MERINGUE BALLS 
4 egg whites, beaten
1 1/2 c. powdered sugar
1/4 tsp. lemon extract
1 c. shredded or grated coconut, make it a generous cup

Beat egg whites until very stiff and dry. Gradually beat in powdered sugar. Add lemon extract. Add coconut. Stir well. (It should be thick.) Shape into small balls and put on slightly greased cookie sheet. Bake in slow 300 degree oven for 15 minutes.
