MICROWAVE PEANUT BRITTLE 
1 c. sugar
1 c. raw Spanish peanuts
1/2 c. corn syrup
1 tbsp. molasses
1 tbsp. butter
1 tsp. vanilla
3/4 tsp. baking soda

Combine sugar, peanuts, corn syrup, and molasses in 2 quart microwave mixing bowl. Microwave at HIGH 4 minutes. Stir and microwave at HIGH an additional 4 minutes. Add butter and vanilla; mix well. Microwave 1 minute longer and remove from oven. Add baking soda; stir until well mixed. Spread on aluminum foil covered cookie sheet to cool. Break into pieces when firm. Makes about 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
