GROUSE WITH ORANGE SLICES 
4 grouse
Salt
Pepper
4 1/2 inch thick orange slices, peeled and seeded
4 slices bacon
1/4 c. butter, melted
Grated rind 1 orange
2 tbsp. orange juice
1 tsp. lemon juice
Chopped parsley

Sprinkle grouse inside and out with salt and pepper. Cover breast of each with an orange slice and a bacon slice; fasten with string. Place grouse breasts up in a baking pan. Roast in preheated 350 degree oven 15-20 minutes or until tender, basting frequently with combined butter, orange rind and juice and lemon juice. Remove string. Sprinkle with parsley. Serve with the roasted orange and bacon slices. Serves 4.

Baked hominy and baby brussel sprouts go well with these delicious grouse.
