WAFFLES 
3 1/2 c. baking flour
2 tbsp. baking powder
2 tbsp. sugar
1 1/2 tsp. salt
4 eggs, separated
3 c. skim milk
3/4 c. vegetable cooking oil

Coat cold waffle maker with no-stick vegetable spray. Heat waffle maker per manufacturers directions.

Mix dry ingredients well. Beat egg whites until stiff. Beat egg yolks in separate bowl until thick. Continue beating egg yolks and add milk and cooking oil. Add dry ingredients, beating until smooth. Lightly fold in egg whites.

Pour 1 cup of batter on preheated waffle iron.

Bake according to waffle iron directions until light golden brown. Serve warm with preferred topping.

Note: For the full flavor and texture of waffles, it is important to follow the directions regarding the folding of the egg whites.

Half recipe: 1 3/4 c. baking flour, 1 Tbsp. baking powder, 1 Tbsp. sugar, 3/4 tsp. salt, 2 eggs (separated), 1 1/2 c. skim milk, 1/4 + 2 Tbsp. vegetable cooking oil.
