CHOCOLATE CREAM MINT PIE 
Single pie crust (use 9" frozen pie crust), cook & cool
3 sq. unsweetened chocolate
3/4 c. softened butter
1 c. sugar
3 eggs
1/2 tsp. peppermint extract
Whipped cream or vanilla ice cream

Melt chocolate in double boiler and set aside to cool. Cream together butter and sugar. Beat eggs. Add chocolate and beaten eggs to butter mixture. Beat with electric mixer on High until smooth. Add peppermint extract and pour into baked and cooled pie crust shell. Chill several hours in refrigerator. Serve topped with whipped cream or ice cream. Serves 6-7.
