ZUCCHINI AND TOMATO 
2 tbsp. butter
1/2 c. chopped green pepper
1/4 c. chopped onion
2 c. sliced zucchini, 1/2 in. thick
1/2 c. soft bread crumbs
1/4 c. grated Parmesan cheese
2 c. water
1/4 c. catsup
1 tsp. salt
1/8 tsp. pepper

Melt butter and sauté green peppers and onions. Add zucchini, bread crumbs, Parmesan cheese, salt and pepper. Turn into 1 1/2 qt. covered casserole dish.

Bake at 350°F for 20 minutes. Add tomatoes and bake 10 minutes more. Melt Cheddar cheese on top and serve. Enjoy!
