MILLION DOLLAR CARROT CAKE 
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/4 c. salad oil
4 eggs
2 c. grated carrots
1 (8 1/2 oz.) can crushed pineapple, drained
1/2 c. chopped pecans
1 tsp. vanilla
1/4 tsp. maple flavoring
1/4 c. flaked coconut

Mix together first 6 ingredients. Add oil and eggs. Mix well. Add remaining ingredients and mix well in electric mixer. Pour into 3 (9 inch) round layer pans or one 9x13 pan or 10 inch springform which has been greased and floured. Bake at 350 degrees 50 to 60 minutes. Add another 20 minutes for 10 inch spring form. Frost with cream cheese frosting.
