MISSISSIPPI POTATOES 
8 c. frozen hash browns
1 c. mayonnaise
1 tsp. salt
1/2 tsp. pepper
1 lb. American cheese, diced
1/2 c. chopped onion
4 - 6 slices fried bacon, crushed

Toss potatoes with all ingredients but the bacon. Place in buttered 9 x 13 inch baking dish. Sprinkle bacon over the top. Bake at 325 degrees for 1 hour.
