FRESH APPLE POUND CAKE 
2 c. sugar
1 1/2 c. vegetable oil
3 lg. eggs
3 c. flour
1 1/2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
3 c. diced firm apples
3/4 c. flaked coconut
1 c. black walnut pieces

Mix sugar and oil. Add eggs; beat well. combine flour, salt, and baking soda. Add to oil mixture. Stir in vanilla, apples, coconut, and walnuts. Spoon into 9-inch oiled (pound) cake pan. Bake at 325 degrees for 80 to 90 minutes. Cool and serve. About 16 servings.
