RHUBARB COFFEECAKE 
1 1/2 c. brown sugar
1/2 c. (1 stick) butter
1 egg
1 tsp. vanilla
1 c. buttermilk
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. rhubarb, cut in 1/2 inch pieces

TOPPING:

1/2 c. sugar
1 tsp. cinnamon

Cream brown sugar and butter. Add egg and vanilla. Add buttermilk alternately with flour, baking soda, and salt. Fold in rhubarb. Top before baking with sugar and cinnamon mixed together. Bake at 350 degrees for 40 minutes or until done in a 9x13 inch pan.
