CARROT BAKE 
5 lg. carrots, sliced
3 stalks celery, chopped
1 stick butter
1/2 c. onion, chopped
1/2 c. Velveeta cheese
Crushed Ritz crackers

Cook vegetables until tender. Melt butter and cheese then toss with vegetables. Top with crushed crackers. Bake at 350 degrees for 30 minutes.
