BAKED SHREDDED CARROTS 
3 c. coarsely shredded carrots
1/3 to 1/2 c. coarse chopped pecans
3-4 tbsp. butter
2 tbsp. orange juice
1 tbsp. lemon juice
Dash of salt

Preheat oven to 350 degrees. Spray casserole pan with vegetable spray. Thoroughly mix all ingredients. Put into casserole and cover. Bake at 350 degrees for 35-45 minutes.
