MARINADE CHICKEN | |
1 c. Italian dressing 1/4 c. honey 3 cloves garlic, minced 1/4 c. maple syrup 3 tbsp. lemon juice 2 tbsp. soy sauce 1 tbsp. Dijon mustard 1 tsp. curry powder 1/4 tsp. ground ginger Mix well; divide marinade mixture in half. Pour half of the marinade into a jar and refrigerate. Put the remaining half of the marinade mixture in a plastic bag with the boneless chicken breast. Marinate for several hours or overnight in refrigerator. Remove chicken from plastic bag and discard the marinade that was used for the chicken (or it may be used for basting the chicken only during the first 5 minutes of cooking - then discard). Grill chicken over hot coals until tender. Bring to a boil the marinade which was stored in the jar. Serve chicken on a bed of rice and pour the fresh (from the jar) marinade over the top; serve.
