ICE CREAM CAKE 
55 Ritz crackers, crushed
1 stick butter
4 sm. pkgs. instant coconut cream pudding
3 c. milk
1 (8 oz.) Cool Whip
1 half gallon vanilla ice cream, softened
1/2 c. coconut

Melt butter and add cracker crumbs. Mix together and save half the mixture. Press remaining half of mix in 9"x13" pan. Combine dry pudding, milk and softened ice cream in large bowl. Mix thoroughly with wooden spoon and pour over cracker mixture in pan. Spread Cool Whip over top. Sprinkle 1/2 cup coconut on top of Cool Whip. Sprinkle remaining half of cracker mixture over coconut. Refrigerate overnight.
