MIXED VEGETABLE CASSEROLE 
2 cans mixed vegetables (Veg - All brand)
1 sm. onion, diced
2 tbsp. butter
1 sm. sour cream
Ritz crackers
1 c. shredded cheddar cheese

Cook onions in butter, add sour cream and stir until melted. Pour over vegetable mix. Top with crushed crackers, bake for 45 to 50 minutes at 350 degrees.
