MIXED VEGETABLE CASSEROLE 
1 (16 oz.) bag frozen vegetable combo (broccoli, carrots, cauliflower), thawed and drained
1 (10 3/4 oz.) can cream of mushroom soup (low sodium)
1 c. shredded Swiss cheese, 4 oz. (low sodium)
1/4 c. sour cream (light)
1/4 tsp. ground black pepper
1 (4 oz.) jar sliced pimento, drained
1 (2.8 oz.) can French fried onions

Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, pimento, and 1/2 can French fried onions. Microwave covered on high 8-10 minutes, or until vegetables are done, stirring halfway through.

Sprinkle remaining cheese and onions in diagonal rows across top. Microwave uncovered 1 minute or until cheese melts. Let stand 5 minutes. Recipe doubles well. Add second bag of frozen vegetables (broccoli, water chestnuts, peas) and second can of soup (cream of celery) and mix cheddar with Swiss cheese. Omit second jar of pimento. Double everything else.

Since microwave ovens vary in power, you may need to adjust your cooking time.
