MIXED VEGETABLE CASSEROLE 
1 lg. pkg. frozen mixed vegetables
1 c. grated Velveeta cheese
1 c. mayonnaise
1 c. chopped celery
1 med. onion, chopped
1 stick butter
1 tube crackers, crumbled

Cook vegetables as directed on package (tender but not mushy). Place in greased casserole dish. Mix onions, celery, cheese, mayonnaise. Spread over vegetables. Melt butter and mix with crackers. Sprinkle ove top of other ingredients.

Bake 30 minutes at 350 degrees. May have to cook a little longer until it bubbles up and boils through cracker crumbs.

I made this last night, and it was good, but I did make some modifications to make it turn out very good. I made a double batch using just carrots, cauliflower, and corn as I feel broccoli is too overpowering. I used one cup salad dressing, and since I ran out, I substituted one cup ranch dressing. I mixed both together with some onions, I spread it over the veggies, topped with pre sliced velveeta, and topped with cracker crumbs and butter topping. Delicious.
